In the making · The method
Each piadina is kneaded on the spot following the traditional Romagna recipe, with flour, water, salt, lard and yeast for the classic dough, or with wholemeal flour and oil for the vegan version.
The piadine are hand-rolled one by one, following the artisan method that ensures uniform thickness and the right consistency.
Cooking takes place as soon as the order is placed, on the hot griddle, to achieve the characteristic fragrance and softness of freshly made Romagna piadina.
