The butcher's shop offers superior-quality meats, carefully chosen and cut. Availability extends to cuts that are often hard to find, such as duck breast and guinea fowl, available on order.
The dedicated display case holds meats subjected to superior aging, a process that enhances the tenderness and flavor of the muscle fibers.
The cured meats are made through in-house artisan processing. Guanciale (cured pork cheek) is one of the shop's flagship products, recognized for its distinctive qualities.
The workshop produces ready-made dishes ranging from Roman tradition to contemporary proposals, such as pulled pork and meat sushi.
