In the making · The philosophy
The farm grows olives, legumes and grains using organic methods, respecting the natural rhythms of the Umbrian land and producing raw ingredients that go straight to the table.
All the food offered comes from the farm itself: extra virgin olive oil, legumes and grains grown on site create a dining experience where the supply chain shortens until it all but disappears.
The Umbrian cooking courses pass down the region's recipes – hand-made pasta, torta al testo, umbricelli, bread – while the guided tastings tell the story of the land's flavours through oil, legumes and local wines.
