ristorazione — Cogne · Valle d'Aosta
In Cogne, at the heart of the Gran Paradiso National Park, an old stable with its adjoining hayloft keeps alive the flavours of the Aosta Valley: the model is that of the Alpine communities of the past, where whoever cured the meats was the same person who brought them to the table.
In the historic centre of Cogne, along Via Limnea Borealis, the door of the Sonveulla opens onto a space carved out of an old stable with its adjoining hayloft, restored with respect for every beam and every original stone. Wood still dominates the interior, and anyone who walks in immediately recognises the architecture of Alpine buildings: no artifice, only the same materials as always.
The wood-burning stove is no ornament: it is always lit, warming the room and cooking the polenta with the slowness this dish demands. The wood lining the walls, the low lighting, the informal atmosphere reminiscent of an Aosta Valley mountain home make every guest feel part of the family, not just another customer passing through.
In the kitchen, the work is built on local ingredients: the cured meats are made in the in-house artisan workshop, the herbs are gathered wild in the valleys by expert hands, and homemade pickled vegetables complete each dish. The menu features Valpellinentze soup, one of the most emblematic dishes of Cogne's tradition, alongside local cheeses and house-made cured meats.
Flavours that the valleys of Aosta have refined over time, brought to the table without mediation or shortcuts. The full page tells the story of each dish and the workshop that produces them.
