In Ferrara, beneath the porticoes of the Este city, an artisan roastery has worked coffee since 1948. Four generations of the Govoni family have turned the choice of beans into a recognisable method, serving bar professionals and home kitchens alike.
Beans from four continents arrive on the workbench: Brazil and Colombia for the Arabica, Vietnam and India for the Robusta. The roastery selects each origin with method, composing blends destined both for the professional Ho.Re.Ca. channel and for direct sale, including through an active e-commerce with a wide range of references.
Roasting is the gesture that sets an artisan roastery apart from an industrial production line: the heat, the timing, the reading of the bean as it changes colour. Since 1948 the Govoni family has refined this step generation after generation, and today opens it to the public with guided visits and tastings held directly on site.
On the shelf sit the packaged blends — among them the Marfisa, a customer favourite — alongside pod, decaffeinated and barley coffee references. For those working in the trade, La Brasiliana has developed an in-house Academy, an AICAF-accredited centre, dedicated to the professional training of baristas and Ho.Re.Ca. operators across the whole service chain.
