ristorazione — Opera · Lombardia
In Milan's southern hinterland, in Opera, Ristorante Pizzeria dell'Amore was born in 2012 from a simple, ambitious idea: to bring authentic Italian cooking to the table, built by hand every day, with selected ingredients and real care.
In 2012 George Salib opened in Opera as a takeaway pizzeria, with a clear goal from day one: to bring quality and respect for Italian tradition to every dish. In just over a decade the place grew, transformed, and became a fully-fledged restaurant, with a menu that changes daily so as never to repeat the same offering.
The generous spaces, recently renovated and well lit, welcome guests with an atmosphere long-standing customers describe as familiar: the staff are warm, attentive, able to make every guest feel at ease. A dining room that is not merely the setting for a meal, but a place people return to — for years, regularly — certain of finding the same care each time.
Every day the dough is worked in the kitchen: spaghetti, ravioli, mezzalune, tagliatelle and pappardelle come fresh from the prep counter. The pizzas are made with a long-fermentation dough and baked in a wood-fired oven; among the specialties, the gluten-free version — named by several customers among the best in the Milan area — rounds out an offering designed for everyone.
At the finish, the dish tells the whole story: selected ingredients, daily gestures repeated for over a decade. A cuisine that in Opera is never improvised — the full page awaits.
