ristorazione — Suvereto · Toscana
In the medieval heart of Suvereto, among the hills of Val di Cornia, a cobbled alley leads to a pizzeria that has made dough and Tuscan territory its reason for being. An address you find by chance and remember for a long time.
Suvereto guards its secrets among cobbled alleys and stone walls that time has patiently smoothed. The entrance to Pizzeria Vicolo Stretto opens onto one of these narrow, silent passages, right in the medieval historic centre: an invitation to slow down and let yourself be surprised by what the borgo (historic village) still knows how to hide.
Inside, the atmosphere is that of a place run with personal care: few tables, a warmth that keeps no distance, the feel of people who have chosen to make this space their own. Barbara Pruneti and her staff give the same attention to every guest, including dogs in tow, who are spontaneously brought a bowl of fresh water.
The work begins long before service: the dough rests at length, developing a light, digestible structure that reviews mention time and again. This is not a shortcut, it is a choice of method. The kitchen works on unhurried timing, because a pizza that rises as it should allows no haste and no compromise on the quality of the base.
Fresh ingredients from the Tuscan territory, creative pizzas such as the Tina la Tartufina with truffle: the page tells the whole story of the menu.
