A Regenstauf, in the heart of Bavaria, Paradiso da Carlo has been carrying forward an entirely Italian ritual since 2000: pizza and pasta made properly, served by Carlo himself in a dining room with the feel of a true trattoria.
Since 1 December 2024, the new home of Paradiso da Carlo sits inside the Sportcenter of the Eckert Schulen (Eckert Schulen educational institute): a modern entrance opening onto an unexpected atmosphere, that of the Italian trattorie of old. Carlo has run the dining room in person since day one, and over twenty-five years has built a clientele that returns out of habit, not by chance.
In the dining room, the Neapolitan tradition menu meets one built around the sea: pasta made in house every day, classic first courses and fresh fish dishes that change with the season. The wood-fired oven is the heart of the story: it bakes pizza according to Italian tradition, with classic dough as well as spelt and whole-wheat variants available on request. Those with gluten intolerance find a real solution: a gluten-free line prepared and baked in a separate oven, with no risk of cross-contamination.
