Born as a school to train pizzaioli (pizza makers), Pizza Verace has turned a teaching vocation into a landmark restaurant. Marco Carlesso and Leonardo Carrero, the Italian founders, chose Panama City as the stage on which to prove that Neapolitan tradition is not a geographical inheritance, but a discipline passed on through rigour and passion.
At the table, every pizza tells a precise supply chain: San Marzano DOP tomato, Campania buffalo mozzarella DOP, Parma ham DOP, Parmigiano Reggiano. Certified ingredients, imported from Italy, that define the boundaries of a menu with no shortcuts. The Panamà pizza — buffalo mozzarella, mushrooms, Parma ham and truffle — is its most eloquent synthesis.
In the kitchen, the wood-fired oven sets the pace: traditional Neapolitan dough, thin and toasted, demands a temperature that allows no approximation.
