produttori — Loiri Porto San Paolo · Sardegna
On Sardinia's north-eastern coast, where Gallura slopes down towards the sea at Loiri Porto San Paolo, an artisan workshop preserves the shapes of Sardinian pasta with the care reserved for things worth not losing.
In 2018 Gianfranco Burrai opened the workshop in Loiri Porto San Paolo with a clear idea: to bring back to the worktable the shapes of Gallura pasta, the ones once learned at home and at risk of becoming nothing more than a memory. From that worktable grew a family artisan business, rooted in Gallura.
The hands that work the dough follow the grammar of Sardinian tradition: shapes typical of Gallura, made by hand, no industrial shortcuts. Lu Rutigliu's pasta carries the memory of a specific territory, recognisable in the gesture even before the taste.
On the shelf stand the pasta-maker's finished products: half-kilo packs of fresh artisan pasta, ready to reach tables near and far. A small production by choice, where every shape comes from the same workshop and the same method with which it all began.
