In the hinterland of Cosenza, in Grisolia, Panificio Fiore has been carrying forward a simple, precise art since 1987: turning flour and water into bread you recognise by its smell. Every morning, Maurizio Fiore's workshop produces ciabatte, baguettes, focacce and pastries with artisan method.
At the workshop bench, the day begins before dawn. Selected flours, water and yeast: the composition is essential, the gesture the same as always.
