In the heart of Norcia, along Corso Sertorio, Osteria Sienti'n Può brings the tradition of Norcia to the table with the same fidelity that the Sibillini Mountains have shown in guarding their black truffle. An address within the Sibillini Mountains National Park, where kitchen and territory have spoken the same language for generations.
At number 46 Corso Sertorio, in the historic centre of Norcia, the osteria opens onto the town's main street. It is the position of those who have chosen to stand within the life of the town, not at its edges — a choice that already says something about the idea of hospitality held by Rodolfo Di Biagio and his family, settled at the heart of the Sibillini Mountains National Park.
The dining room reflects a hospitality that is not measured by the dishes alone: reviews tell of a bowl of water brought spontaneously to a dog, without anyone asking. It is the same care found in the full menu offered for thirty euros — starter, pasta, main course, dessert, coffee and drinks — a balance between generosity and respect for whoever sits at the table.
Almost all the pasta is made in house: fregnacce alla norcina, fettuccine with Norcia black truffle, reginelle with fresh ricotta, sausage, local pecorino and truffle. The raw materials come from the surrounding territory — porcini mushrooms from the Sibillini Mountains enhanced with extra virgin olive oil from Trevi, cheeses and cured meats from Norcia — favouring, whenever possible, organic, zero-kilometre local produce.
