ristorazione — Gubbio · Umbria
At the mouth of the Gola del Bottaccione (Bottaccione Gorge), where the medieval aqueduct marks the boundary between Gubbio's historic centre and the bare rock, a family-run osteria has for years kept faith with the authentic flavours of Umbrian cooking, without giving in to trends or compromises of any kind.
Crossing the threshold of Osteria del Bottaccione means entering a place that takes its name from the gorge that embraces it: the Gola del Bottaccione, where Gubbio's medieval aqueduct cuts through the limestone rock like an indelible mark of time. The address is Via Giove Pennino, in the historic centre; the entrance itself is already a declaration of authenticity: nothing superfluous, everything necessary.
In the dining room is Aldo — known as il Generale (the General), as the regulars call him — who welcomes guests with that discreet kindness no manual can teach. Rosita works in the kitchen. Together they keep up a rhythm that feels like home: reviews speak of genuine smiles, a truly welcoming atmosphere, and prices that remain fair without anyone needing to point it out.
From the kitchen come fettuccine with fresh truffle and tagliatelle with porcini mushrooms, wild boar in salmì and the traditional Eugubine friccò di pollo (Gubbio-style chicken stew). The pasta is handmade every day; the truffle arrives in season from the surrounding countryside. These are recipes handed down, not reinvented: generous portions, intense flavours, no compromises, with the house wine completing the picture.
The handmade torta al testo, served warm with every course, is the seal of an osteria that has nothing to prove.
