Among the high pastures of Verzegnis, in the heart of Carnia, an organic mountain dairy farm tends to a simple, exacting idea: that good cheese is born where the grass is good, and that the mountain is best told through what it produces.
In Carnia, where the slopes climb steadily toward the ridges of eastern Carnia, Malga Mongranda chooses to work in step with the land. The farm follows certified organic methods: no chemical shortcuts, no forcing of natural rhythms. A choice that reads in the landscape and shows in the product.
The mountain dairy follows the ancient calendar of alpine pasture: the high pastures of Verzegnis mark the seasons of work, from the spring awakening to the autumn descent. It is within this cycle — grass, animals, milk — that the raw material for the cheeses is born. The territory is not a backdrop: it is the first ingredient, the one that cannot be bought elsewhere.
On the aging shelves rest the wheels produced at the malga. Time does the rest: each cheese matures according to its own nature, developing the rind and character that only patience can build. The production is sold directly, keeping the path between maker and taster short.
