In the market of Piazza d'Armi, Ancona's commercial heart, Macelleria Paolo has been a fixture since 1988. A family story that begins in Osimo with Paolo and his wife Ivana, and grows to embrace their children Daniele and Claudia, both graduates of the Istituto Alberghiero (hospitality institute) in Loreto.
Every day, Italian meats of local origin arrive on the marble counter, selected by provenance and cut. Macelleria Paolo works with national meats and produce from the Marche region, choosing the best assortment week by week. It is a work of continuous selection, one that Paolo and his family have carried on for nearly forty years in Ancona's historic market.
The hands working at the counter know how to adapt to every request: rolled cuts, fillings and stuffings are tailored to the customer's taste. Not a fixed catalogue, but an ongoing dialogue between butcher and customer. Daniele and Claudia, who grew up among the counters, bring to this gesture the training they received at the Istituto Alberghiero in Loreto.
Alongside the fresh cuts, ready-to-cook preparations — polpettoni (meatloaf), skewers, homemade sausages, spit-roasted chicken — are refreshed every week. An offering that has won over customers and earned the Certificato di Eccellenza (Certificate of Excellence) for two seasons running. A knife-sharpening service rounds out a range designed for those who care about quality at the table too.
