ristorazione — Castellinaldo · Piemonte
Among the hills of the Roero, in the hilltop village of Castellinaldo d'Alba, an osteria (traditional Italian tavern) brings the most authentic Piedmontese cooking to the table: few seats, produce from the territory, and a young management that has chosen tradition as its language.
In the heart of Castellinaldo d'Alba, on Via Roma, the sign of 'L Crutin marks the entrance to a village shaped by the Roero into vineyards and hazelnut groves. Here, Piedmontese cooking is not a citation but a daily practice: the restaurant was born within the stones of the historic centre, and from there it tells the story of the territory.
The dining room holds few seats, in an intimate space where service is looked after by a single waiter who attends to every table with a kindness and precision that guests have noted. The management is young: a chef-owner who has managed to renew the osteria without betraying the homely character that makes it recognisable.
From the kitchen come handmade tajarin, battuta di fassona piemontese (hand-cut raw Piedmontese beef) with caramelised onion, Seiras ricotta, chopped hazelnuts and dried egg yolk, and a tartare that guests simply call fantastic. Every dish is built on produce from the Roero and Langhe, chosen with care.
Booking ahead is essential: seats are few, and demand, as those who have already been there tell it, never falls short.
