On the Ionian coast, in Avola, Fermentum has redrawn what an artisan bakery can mean: a place where natural leavening with sourdough starter (lievito madre) becomes daily method, and French pastry stands alongside the most deeply rooted specialities of Sicilian tradition.
On Via Marconi, Fermentum's sign marks a fine line between forno and bakery: so wrote someone who wandered in by chance and never stopped coming back. The shop opens six days a week at half past seven, and from that moment the day already has a fixed point in the Avola neighbourhood.
On the counter, the viennoiserie takes shape every morning: croissants, pains au chocolat and pastries with a pronounced buttery flavour, whose filling changes from day to day — a scheduled surprise that regulars have learned to look forward to. Breakfast here is never quite the same twice, and the display case tells a different story each time.
The forno is the heart of the method: natural leavening with sourdough starter (lievito madre), fine selected grains, timilia flour for scacce modicane (stuffed flatbreads from Modica). Sfincione (Palermo-style topped focaccia) and stuffed focacce complete a repertoire that holds together the most authentic Sicily and the technical precision of contemporary bread-making — neither overshadowing the other, with no compromise on raw ingredients.
