In the Tavoliere delle Puglie, where the summer light falls flat on the countryside of Torremaggiore, the D'Ettorres family grows Peranzana: the cultivar that stands as a symbol of olive growing in the Foggia area, which at the Principe Paviro mill (oil mill) becomes an oil recognised on international stages. A story that begins in the soil.
The rows of D'Ettorres olive groves stretch across the countryside of Torremaggiore with the patient geometry of those who have worked the same land for decades. When the founder, Armando, passed away in 1980, his sons decided to give shape to a shared dream: a farm rooted in Peranzana, the family's own cultivar.
Early harvesting is a choice made in the field, not in the laboratory: picking the olives while they are still turning colour means giving up yield to gain freshness and polyphenols. It is the same choice that earned D'Ettorres oil the gold medal at the Dubai Olive Oil Competition Early Harvest and the Best Quality Italia award.
Alongside the traditional line, the D'Ettorres family has developed BioVerde: a range of certified organic extra virgin olive oil that carries the same Peranzana in a form even more attentive to the land. The formats designed for direct sale — from the 500 ml bottle to the five-litre bag in box — tell of a company that wants to reach the table without intermediaries.
At the Principe Paviro mill, every harvest closes with an oil that carries within it the measure of a family and the memory of a territory.
