In the Madonie mountains, at Polizzi Generosa, altitude shapes the pastures and time governs every transformation. For more than three generations the D'Ippolito family has raised livestock free-range, bringing to the table cheeses that speak of an untouched territory.
The Madonie offer an ordered landscape of ancient roots — the same one that for over three generations has been home to the D'Ippolito livestock. The animals live free-range, returning to the stalls only for milking: a rhythm set by nature, not by industry, and one that shows in the quality of every wheel produced.
Alongside the livestock, the company grows cereals on the same Madonie land that feeds the herd: an integrated agricultural cycle, entirely family-run. Salvatore D'Ippolito personally oversees every stage, with the care that only direct, hands-on management can guarantee — from sowing to milking, through to the processing of milk in the dairy.
On the ageing shelves rest artisan cheeses that carry within them the cheesemaking techniques of Sicilian territory. The process is traditional, attentive to every step from the transformation of the milk to the finished wheel. The products are distributed at points of sale in Polizzi Generosa and can be bought directly by contacting the company: a short, transparent supply chain.
