In the Umbrian hinterland, where the waters of Gualdo Tadino flow down from Apennine springs and barley grows on land that Emperor Frederick II crossed in the winter of 1242, a brewery founded in 2013 chose to start again from the root: from land farmed in-house, even before fermentation.
Tenuta Flea is the starting point: a farmed plot where Matteo Minelli and Maria Cristina Cocchi — who founded the brewery in 2013 — grow the barley used in production. Choosing to oversee the raw material from the field onward means controlling every stage even before the wort enters the vat: an uncommon choice among Italian breweries, and one that has become a founding identity here.
To the barley grown in-house at Tenuta Flea are added the mineral waters from the springs of Gualdo Tadino — recognisable for their purity and composition — and carefully selected Italian malts and hops. No filtration, no pasteurisation: the beer reaches the glass just as it comes out of fermentation, carrying with it everything the Umbrian territory has given to its ingredients.
The result is a range of more than ten styles — from blonde ales to IPAs, from smoked beers to Belgian strong ales — each named after Umbrian medieval legends: Anais, Bastola, Bianca Lancia, Federico II. The brewery is open to visitors: guided tours and tastings in the taproom offer a chance to meet the beers where they are made.
