In Contrada Sant'Anna, the sign recalls a Neapolitan legend — the Bella 'Mbriana (the benevolent spirit of the household). Inside, the place welcomes about fifty diners in an atmosphere that feels like family: in front of the oven stands Paolo Mastrocinque, still very young, carrying forward the experience handed down by his father Nicola. Two generations, one oven.
The dining room belongs to a trattoria that seeks substance rather than effect: ingredients gathered from the local area — wild asparagus, rustic guanciale (cured pork jowl), truffle that Nicola forages himself — go into seasonal pizzas such as the Asparagina or the Tartufona, at prices that honour the trust of those who sit at these tables.
The wood-fired oven sets the pace: a longer bake at a lower temperature than the classic Neapolitan style. The dough follows an ultra-regulated hydration and a long fermentation, designed to bring out flavour and ensure lightness. The result, as visitors from Naples themselves note, has nothing to envy in the Neapolitan tradition.
